My Favorite Lunch that is FAST, EASY, and HEALTHY for school!
Let’s be honest, college cafeteria meals are a hit or a miss. Somedays there are fresh greens and a delicious stir fry, and other days you are stuck with below average quesadillas with plain, boring potato chips as a side. And sometimes, students just don’t have the time to wait in line for food in between class.
During my freshman year at college, there were a couple days a week where I would have to skip a meal period to go to class, sports practice, or work. But I needed food otherwise I would get hangry! (And trust me, you don’t want to get in a ten-foot radius of me when I’m hangry)
So I had to quickly come up with an easy solution for a quick, simple, and nutritious option that can work for lunch or dinner. One day while I was scouring the aisles of Fred Meyer’s for a deal, I found my holy grail: Seeds of Change Quinoa & Brown Rice. Okay, I know, it doesn’t sound that great but hear me out.
Quinoa is a healthy superfood, meaning that it is packed with nutritional value and yummy goodness. It is also considered a protein because it contains all nine of the necessary amino acids we need, is gluten-free, and is very filling, so you don’t need to eat tons of it.
And brown rice is another healthy option because it is a whole grain packed with vitamins, zinc, and magnesium. It also promotes weight loss because it is extremely easy to digest. How great does that sound!
And I haven't even told you the best part yet. You can buy this rice and quinoa super grain combination in individual bags that are the perfect size for a meal, and you only need to put it in the microwave for 90 seconds! That’s right, only 90 seconds. You can scroll through your Instagram and your meal will be ready before you even finish scrolling. No effort required, so easy, and so good for you! Oh, and the rice already comes pre-seasoned so you don’t even need to worry about adding extra flavor.
